Pickled Peppers With Halloumi Burger Recipe

If you want to up your intake of vegetables but you’re bored of roasting and steaming perhaps you can find inspiration in this pickling recipe. Peppers have many health benefits including high amounts of vitamin C, vitamin B6 and folate. They are also high in vitamin A which helps to support healthy eyesight and they are full of antioxidants! It is definitely worth preparing some peppers a couple of times a week for a nutrition boost.

This is a quick and easy recipe for pickled peppers only takes 20 minutes and creates a tasty, healthy side dish that will add some kick to everyday meals, such as a delicious halloumi burger, a great meat-free option. If you’re not a big fan of the squeaky cheese why not try a mushroom burger instead?


For pickle:

5 peppers (mix of red and yellow) deseeded and sliced into rings
3 shallots
500ml pickling vinegar
Spices: coriander seeds, black peppercorns, pink peppercorns).
1 bay leaf
1 litre jar (sterilised)


100g pack of halloumi
Brioche burger bun
Handful of rocket

  • First, prepare the pickle. Place a layer of pepper rings into the bottom of the 1 litre jar then add a layer of shallots, adding the coriander seeds and peppercorns along the way.
  • Repeat the layers until all of the peppers and shallots have been used up.
  • Tuck the bay leaf into the jar, down the side works best, and pour the 500ml of pickling vinegar over the vegetables.
  • Close the lid and leave for a minimum of 2 hours before eating. The pickled peppers will last for up to 2 months in the fridge. 
  • Now, prepare the halloumi. Heat a non-stick frying pan over a medium heat. Slice the halloumi into 3 thick pieces and add to the pan. Fry to 1-2 mins on each side.
  • Split the brioche burger bun and put a handful of rocket in the bottom. Top with the halloumi. 
  • Finish off with a generous handful of pickled peppers and shallots, close the bun and enjoy!
