Now the summer seems to be officially here, why not get the barbie out and dine Al Fresco? when we have a barbeque we always have coleslaw as a side dish, But lets face it, it isnt the most healthiest of sides with the fattening mayonnaise and other bits that are added to it.
So how about making your own one? its simple and comes to you in partnership with #keen2cook.
All you need is
6 tbsp of plain yoghurt
1/2 tsp of dijon mustard
juice of one lemon
1/2 a white cabbage OR the equivalent in white, green and red cabbage
1 apple cored and chopped
Handful of sultanas
1/2 an onion
How to make it
finely chop or grate the cabbage, carrot, and onion and place into your bowl.
Slice your radish finely and add to the bowl.
Then take the apple and dice, add it to the bowl with the sultanas.
Get a small bowl and add the yoghurt to it
mix the mustard in with it
Add a pinch of salt and pepper
Mix it all together and add some lemon juice and optional nuts like cashews or hazelnuts. This will keep in the fridge for up to 3 days
This recipe makes an absolutely enormous amount and will work out cheaper than shop bought coleslaw
